Sweeten Your Holiday With This Thanksgiving Recipe

If you’re on the hunt for a new holiday dessert, look no further than our Pumpkin Swiss Roll. It’s sweet, scrumptious and a great item to gobble up on Thanksgiving. Gather some friends around the kitchen table to help you prepare a dish that continues to delight our guests.

What you’ll need:

Note: Measurement in grams and milliliters below for precision purposes. Serves about 16.

Cake
  • All Purpose Flour, Sieved (188 grams)
  • Baking Powder (3 grams)
  • Baking Soda (4 grams)
  • Cinnamon, Ground (8 grams)
  • Ginger, Ground (6 grams)
  • Nutmeg, Ground (2.5 grams)
  • Cloves, Ground (1.5 grams)
  • Salt (8 grams)
  • Eggs (6 whole eggs)
  • Sugar (360 grams)
  • Pumpkin Puree (380 grams)
  • Vanilla Extract (10 ml)
Filling
  • Cream Cheese, Softened (680 grams)
  • Butter, Softened (227 grams)
  • Powdered Sugar, Sieved (390 grams)
  • Vanilla Extract (10 ml)
  • Salt (10 grams)
Garnish (optional)

Consider using ready-made almond brittle.

Cooking Instructions:

  1. Pre-heat oven to 375°F (190°C). Line a baking tray with parchment paper.
  2. Cake:
    – In a medium bowl, whisk flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves and salt.
    – In a separate bowl, whisk eggs and sugar together. Whisk in pumpkin puree and vanilla extract until smooth.
    – Add dry ingredients into the wet ingredients and whisk until smooth.
    – Pour batter onto baking sheet and smooth with a spatula. Bake for 12-15 minutes. Remove from oven.
    – Carefully remove cake from pan by holding onto the parchment paper. Roll cake up, short end to short end. Let cool completely.
  3.  Filling:
    – Mix all ingredients until smooth.
    – Unroll cake and spread the filling. Roll cake up, peeling back the parchment paper as you go.
    – Refrigerate for at least one hour.
  4. Garnish:
    – Dust with powdered sugar and optional ready-made almond brittle.
