For many years, it has been my privilege to partner with Holland America and share memorable dining experiences with travelers from around the world. Today, I’m excited to introduce a refreshed menu that will soon be available across the fleet, bringing new flavors, new inspirations, and some of my personal favorites directly to your table.
When developing these dishes, my goal was simple: create an experience that feels both exciting and approachable. Whether you’ve enjoyed my cuisine before or are trying it for the first time, I want every meal to leave a lasting impression and become a notable part of your journey with Holland America.
New Dishes Inspired by Bold Flavors
As you explore the refreshed menu at Morimoto By Sea, you’ll discover a variety of new offerings that showcase the flavors and techniques that have shaped my culinary journey. Some of the highlights include Tan Tan Noodles, Popcorn Shrimp, Vegetable Wonton, Miso Lamb Chop, Orange Chicken, Grilled USDA Prime Rib, and Butter Poached Lobster Tail.
You’ll also find an updated Morimoto Sushi Mori, inspired by the popular selection previously featured in our pop-up dining experience. Every dish has been thoughtfully crafted to celebrate exceptional ingredients while delivering the balance, creativity, and flavor I strive for in every recipe.
For me, great food is about more than a recipe. It’s about creating a connection through taste, texture, and presentation. My hope is that these new additions invite you to discover something unexpected while still feeling familiar and welcoming.
Sharing My Passion for Fresh Fish
As Holland America’s Fresh Fish Ambassador, I have the opportunity to showcase some of the finest catches available at sea. Fresh, high-quality ingredients have always been at the center of my culinary philosophy, and fish remains one of my greatest passions.
Through my partnership with Holland America, I have the honor to bring that passion directly to you. Whether you’re enjoying sushi or one of our signature entrées, my hope is that every bite reflects the care, craftsmanship, and attention to quality that define the dining experience on board.
Continuing Our Culinary Journey Together
I’m also excited about the opportunity to spend time aboard Nieuw Amsterdam on an Alaska cruise in May 2027. One of the things I enjoy most about cruising is the way food brings people together. Great meals create connections, spark conversations, and become part of the memories you take home with you.
