"Integrated production" is the underlying business model here, with pruning waste used as organic fertilizer, careful management of the vegetation canopy to reduce erosion and facilitate ground permeability, and sparse use of herbicides and pesticides to preserve the micro-habitat of native species.
The olive groves benefit from a climate spectacularly similar to the Mediterranean, with mild winters, rainy falls and springs, and warm, dry summers. Olivos de las Animas extra-virgin olive oils are harvested by hand and undergo a cold extraction system, resulting in an acidity lower than 0.2%.
