Greenland proudly presents ultra-pure organic ingredients harvested from the icy polar sea to steep, elevated landscapes. Food is a big part of a country's culture, and that is perhaps more true in Greenland than anywhere else, as provisions are hard-won through trapping game in the mountains, coaxing produce from rocky soils, and fishing dangerous waters for protein. Meat from marine mammals, game, birds and fish has been the main ingredient in Greenlandic food for generations, usually naturally free-range and wild.
Today's culinary experience is your chance to try specialties eaten locally -- dried cod, fresh shrimp, the famous mattak (whale skin with blubber) and seal blubber. These and other taste sensations are decoratively served on rocks in the Old Town precinct of Sisimiut.
Notes:
This tour is conducted entirely on foot. The terrain can be slippery when wet. Wear sturdy non-skid walking shoes. Terrain includes rocks, uneven surfaces, grass, steep inclines, gravel and steps. Sub-Arctic cultural sensitivities to consuming marine mammals (including seals and whales) are not part of the cultural landscape in Greenland; these food components have played a pivotal role in sustenance here for thousands of years and continue to do so today. Guests who may find this distressing should not participate, as substitutions cannot be made; however, participants can, of course, politely decline to sample any particular food. It is essential that you wear warm, layered clothing to fully enjoy and participate in this excursion. Outer layer should be windproof and waterproof. Bring gloves, a warm hat, and a scarf.
