It's always tea o'clock in Morocco! Mint tea is the ubiquitous beverage here -- deals are sealed, marriages are made, and fates are forged over it, but how to make it well remains a mystery to outsiders. Today, you'll learn the secrets of crafting perfect peppermint tea and enjoy it with freshly baked bread.
Set out with a small group (maximum 10 privileged guests) for a more personalized experience. You're headed to the Grand Socco -- the souk or marketplace that is the hub of Tangier. Although there are fewer vendors here than in the old days, it is still home to street musicians, a fish market, handicraft stalls and fresh spices of every color. It is organized chaos and, thus, a fun and unique place from which to begin your Tangier experience.
Proceed to Blue Door Cuisine, where a chef will teach you how to prepare Moroccan mint tea. Esteemed the world over, Moroccan tea involves a rather elaborate step-by-step preparation that entices both eyes and palate.
Once you have perfected the art of tea making, roll up your sleeves and follow the chef's instructions to prepare the perfect bread dough. The next step is also something quintessentially Moroccan. Take your dough to the community wood-burning oven (ferran or frans), where locals mingle while they wait for their bread and pastries to bake. Frans were once found in every neighborhood, baking dozens of loaves at once. These Frans can still be found and are used by locals in the old Medinas. As so many loaves of bread were baked together, anything placed in the oven was marked with a rubber stamp.
Once your bread is done baking, sit down to enjoy a slice with locally made condiments, handmade Moroccan cookies and, of course, mint tea!
Notes:
Modest attire is required; knees, shoulders and midriffs must be covered. Tight-fitting, transparent, or translucent clothing is not permitted. Do not wear white clothing, as it is seldom adequately opaque. Please err on the side of conservatism with your attire. Wear comfortable walking shoes. Terrain includes two flights of stairs (with handrail) to access the tea-making venue.
