Meet local Alaskans and understand how and why everything about food differs in the 49th state.
Begin with a brief narrated panoramic drive through Skagway's historic district; then, meet an experienced chef and the owner of the Historic Skagway Inn & Olivia's Restaurant. In this historic building that was once a brothel, your hosts will share how food preservation technology from the time of the Gold Rush is still used today. Go behind the scenes for a look at the Inn's organic kitchen garden and learn how the sun and temperature affect greens grown in this Northern Garden,
The science of artfully blending old and new cooking skills transforms garden and seafood items into delicious meals and local food favorites. Watch professional knife handling and pick up some tips on selecting and using the best knives. You will learn how to smoke Alaskan halibut or salmon and peek into making sourdough bread as part of the Alaska food story.
Now, enjoy a foodie tasting of smoked fish, vegetables from the garden, and sourdough bread. Finish up by making (and devouring) a surprise dessert with a tie to Alaska.
