Happy Thanksgiving From our Table to Yours

Happy Thanksgiving to all of our celebrating readers, fans and guests. Below is the menu that will be served onboard our ships tonight in honor of the holiday. Here’s hoping your own menu is delicious and fulfilling. Enjoy the holiday, and the Holland America Blog will resume its regular publishing schedule on Monday.

Appetizers
Ambrosia Fruit: Delectable chunks of glistening pineapple, juicy apricots and satiny rhubarb, showered with mint leaves

Harvest Farmers Meat Terrine and Poached-Dilled Shrimp Perched on a mound of Waldorf salad, with mandarin-orange-cranberry chutney

Shrimp Cocktail Accompanied by American cocktail-brandy sauce

Soups & Salad
Spiced Pumpkin Soup: Fresh oven roasted pumpkin blended with apple cider and fall spices

Game Consommé with Aged Port: Slow-simmered broth with tender root vegetable julienne and bread dumplings

Classic Vichyssoise: A velvety purée of leek, onion and potato

Bibb Lettuce Salad with Oranges and Fennel Served with Green Goddess dressing

Traditional Thanksgiving Turkey: Roasted whole until golden and juicy, served with an aromatic apple and sausage stuffing, giblet gravy, bourbon-infused candied sweet potatoes, Brussels sprouts, glazed dilled carrots and turnips, corn and a cranberry orange relish

Rib Eye Steak au Jus served with a generous ladleful of red wine gravy, green beans, glazed carrots, turnips and mashed potatoes

Grilled Salmon Fillet with Crab Cake: Coho salmon topped with a crab cake and a light Newburg sauce, served with steamed new potatoes, yams and peas
