It’s not a creamy sauce like you find in the U.S. After the crisp bacon chunks and black pepper are added to spaghetti straight from the pot a raw egg is cracked and mixed in. The heat of the pasta cooks the egg. Fresh grated cheese finishes off this simple, classic culinary icon.
