Holland America Line’s Summer Menus Feature Locally Inspired Dishes and Regional Flavors

A cruise with Holland America Line means an in-depth, immersive experience of the various locales you’re visiting — both on board and ashore. From shore excursions to Explorations Central, we aim to provide guests with an authentic experience unlike anything else, and that includes bringing the destination to the ship through regionally inspired cuisine.

This summer, cruisers sailing to Alaska, Canada/New England, Northern Europe and the Mediterranean will find locally inspired dishes throughout the menus of the ships in those regions — from Lido Market and Dining Room to select specialty restaurants. Read on for a taste of what you can expect!

Upon embarking an Alaska cruise, guests can delight in a tasty selection of appetizers including Salmon Brochettes with Sorrel Aioli, Cheese and Beef Piroshky, Macadamia Cilantro Crusted Shrimp and Hazelnut Crusted Beecher’s Flagship Cheddar.


The Lido Market will feature various themed dinners throughout the cruise, such as a Salmon Bake or Gold Rush Dinner. Guests also will find that the irresistible Beecher’s Grilled Cheese is available daily at the breadboard station for lunch.

Hungry for more? Guests can head to the Dining Room for a menu that highlights Pacific Northwest offerings suggested by our own Culinary Council Member and Seattle Chef Ethan Stowell, or make a reservation at Pinnacle Grill, which features Pacific Northwest fare yearround, for the fresh Catch of the Day, like a delicious filet of Copper River Salmon.

Exploring the eastern coast of North America on a cruise to Canada/New England aboard Veendam, Zaandam or Zuiderdam? Get your taste buds ready for local delicacies on board. The immersion begins at sailaway with passed appetizers including mini lobster shrimp rolls, garlicky cheese dip and Tourtiere meat pie with maple syrup.

Lido Market will feature a Poutine Bar, a dish originating from Quebec consisting of French fries and cheese curds topped with a brown gravy, as well as a New England themed dinner. Guests in the Dining Room will enjoy express lunch on late arrivals/early departures with New England themed items, as well as a New England Theme Lobster Platter as a Supplemental Menu item. Upon departure from Prince Edward Island, guests can indulge in authentic PEI Muscles in the Dining Room or Lido Market. A New England theme menu will be available every night in Pinnacle Grill with New England Clam Chowder, Maine Lobster and Blueberry Oatmeal Crisp a la mode with Vanilla Ice Cream.

Special regionally themed beer and cocktails will be offered, along with beer tastings and Canadian mixology classes.

Guests heading to Northern Europe will enjoy a delectable bon voyage treat of passed appetizers that include Frikadella with beet root and cucumber, cured salmon with Keta caviar and caramel cheese with huckleberries.

During embarkation day at Lido Market guests can enjoy a Dutch cheese sampling by Grand’Or. Indulge in Le Chevre Goat cheese with honey or Grand’Or Gouda with cumin … yum! Throughout the cruise Lido Market also will offer a Baltic Breakfast Corner, as well as a Baltic Theme Dinner with Maatjes Pickled Herring and a Fresh Norwegian Cod Fish & Chips Dinner.

Pinnacle Grill will feature fresh fish offerings like cod, haddock, plaice and turbot. The restaurant also will also feature an Indonesian Rijsttafel dinner for guests sailing aboard Zuiderdam, while Nieuw Statendam guests will find the same dinner offered at Tamarind.

Upon embarkation, guests will find a tasty offering of Mediterranean-inspired appetizers including, prosciutto parmesan crisp, grilled mushroom, roasted pepper tapenade and seafood antipasto.


Lido Market will feature a Mediterranean Theme Dinner during the cruise. Guests also will also Italian & Spanish cold cuts and antipasto throughout the voyage, along with regionally themed items like delicious baklava, dolmas, tarasmalata and Turkish delight.

In the Main Dining Room, guests will find the dinner menu highlights regionally inspired dishes, including delectable lobster and white asparagus. Pinnacle Grill will feature fresh fish offerings like snapper and swordfish, and Canaletto will offer an Italian Cellar Master Dinner.
