Cruise Diary: A Day at Sea

Days at sea are great to just relax, but my group of colleagues and me were blessed to have a tight itinerary touring the ship to get a more in-depth idea how everything works on the wonderful Nieuw Amsterdam. Early in the morning we had the “Galley Tour” that is available for all passengers on board (it’s free and very popular). It was a great tour. I wonder how the staff can do all this work, 11,000 meals per day, have everything on time and be always smiling? “It’s all team work,” said the food and beverage manager.

In the afternoon, Guest Chef Richard Chamberlain had a presentation where he cooked a lemon vanilla & olive oil poached salmon with lemon saffron aioli, and lobster and shrimp risotto cakes with smoked tomato sauce. I need to say that Chamberlain enjoyed the presentation as much as guests did.

After a visit to the Bridge (that is not a regular tour), and hearing from the officers of the ship how easy is taking care of these huge cruise ships (I can’t imagine that it’s as easy as they said), we met the environmental officer. He gave us a guided tour showing the sophisticated system that HAL uses to take care of the environment.

During the evening, our group went to the Silk Den for a drink and then to Tamarind for dinner. Everybody at our table agreed that this restaurant is one of the best at sea. Our dinner started with an exquisite ying-yang scallop consommé, the spring rolls delight and the green papaya salad; for my main course I chose the snapper baked in rice paper. For a sweet ending the mango sorbet was the perfect choice.
