Seattle, May 5, 2009 — David McMillan, corporate executive chef for Consilient Restaurants, is scheduled to sail as part of the guest-enrichment program on the Sept. 6, 2009, Western Europe voyage aboard Holland America Line’s ms Prinsendam.
The Greenwich (London), England, to Civitavecchia (Rome), Italy, cruise in which McMillan is planned to be the featured celebrity chef calls at Zeebrugge (Brussels), Belgium; La Coruña, Cartagena and Port Mahon, Spain; Leixoes (Oporto) and Lisbon, Portugal; Ceuta, Spanish Morocco; St. Tropez, France; Santa Margherita, Italy, and Portoferraio, Elba, Italy.
During his cruise, the epicurean expert will perform cooking demonstrations for guests in the ship’s state-of-the-art show kitchen, conduct seminars and tastings, and participate in question and answer sessions.
McMillan studied fine arts and sculpture at Boston University before a stint in Europe reaffirmed his culinary desires. Playing multiple roles, McMillan has been chef, owner and caterer for top-rated restaurants, hotels, Hollywood celebrities and world dignitaries.
McMillan was a former commis at Café Konig in Baden, one of Germany’s finest resorts, and has worked with some of Europe’s most prestigious wine chateaus including Petrus and Pontet Canet, as well as Château St. George. Stateside, McMillan has been associated with some of the country’s leading hotel companies in addition to being a corporate chef for Hyatt hotels and executive chef at Beverly Hill’s famed Peninsula Hotel, which was awarded both five stars and five diamonds during his tenure. As partner and executive chef of Legacy Restaurant, which opened 1995 in the former famed Scandia location on Sunset Blvd., McMillan presided over what “L.A. Magazine” voted one of the 10 best new restaurants in L.A.
At the 1996 Olympic Games in Atlanta, Ga., McMillan served as executive chef for World Broadcasters division of the Atlanta Committee of the Olympic Games, where he was responsible for creating and preparing cuisine at seven dining facilities. In 2001, McMillan partnered with the Anatole and the Crowe family to be involved with the spectacular renovation of the famed Nana. He was selected during his tenure to cook at the James Beard House in New York as one of America’s Best Hotel Chef’s. After his tenure with Nana, McMillan became the chef and owner of 62 Main in Colleyville, Texas. In 2008 McMillan joined Consilient Restaurants as their corporate executive chef. Consilient Restaurants develops, expands and operates new restaurant and entertainment concepts. Holland America Line launched its innovative culinary guest-enrichment program in 2005. Each of the line’s 14 ships features a Culinary Arts Center. A first-class “show kitchen at sea,” the Culinary Arts Centers presented by “Food and Wine” magazine resemble the elaborate show kitchens used by celebrity chefs on television cooking programs and offer culinary demonstrations, tastings and hands-on cooking classes aboard every Holland America sailing.
Each facility features a theater-style venue, with two large plasma video screens and a large cooking display counter where guests can learn from the masters. In partnership with “Food and Wine” magazine, Holland America Line has scheduled approximately 60 celebrated chefs and wine experts to sail in 2009. On cruises that do not have a celebrity chef on board, classes and demonstrations in the show kitchen are scheduled with Holland America’s own expert chefs.
Holland America Line also offers a youth Culinary Arts Center activity program to teach kids and teens how to cook. The program incorporates dishes from breakfast, lunch, dinner and snacks in complimentary 45-minute-long classes. Kids under eight years old learn to make theme cookies, fruit roll-ups, ice cream sandwiches, salad people art and scones. Kids eight and over make soft pretzels, granola bars, pita chips and hummus, and saltwater taffy. Teens also can attend adult culinary demonstrations.
