First generation Italian-American John Coletta is the executive chef of Quartino Ristorante & Wine Bar, an urban Italian restaurant and wine bar in Chicago that offers authentic regional Italian specialties. Under chef Coletta’s leadership the restaurant earned the coveted Ospitalià Italiana seal, which is awarded by the Italian government and recognizes restaurants abroad that properly promote the traditions of the Italian food culture, and was awarded three stars by the Chicago Tribune and the Chicago Sun-Times. Chef Coletta has trained under legendary chefs like Alain Ducasse and Jöel Robuchon and is the cookbook author of “250 True Italian Pasta Dishes.”
